Two years ago, I ventured into my first jelly making session. My friend, Erin, and myself decided to try our hands at making our own homemade strawberry jelly. And it was fabulous! We made enough jelly that it lasted two years. A month or so ago, as I was retrieving a jar from the freezer, I noticed that we were running quite low...so I called Erin and we set up another jelly making date.
Yesterday I stopped down at the local farmer's market and picked up our strawberries...amongst a few other items like peonies, fresh basil and garlic pasta and some fresh garlic bread.
Erin came over this morning to begin jelly production...okay it was after 11am because neither one of us are exactly early risers. We took to hulling and mashing the strawberries. Once that was complete we moved onto the most important step which is adding in the ton of sugar that makes the mixture so yummy. This is the part that left to my own devices, I could just sit and eat with a spoon all day.
When all was said and done, we each ended up with 8 fabulous jars of strawberry jelly that will hopefully last until next summer. To be on the safe side, I may have to make an additional small batch soon just in case. It would be horrid for April to come next year and we need to buy store jelly.
Now what to do next...I still need to finish the Batman cross stitch for E, Star Wars shirt for T and make new cushions for the chairs outside. What to do?
